Quick Thai Peanut Sauce

If you're looking for a quick and easy Thai peanut sauce to use as a dip, salad dressing, or to mix into a stir fry, this is it. Thai peanut sauce traditionally contains red curry paste and coconut milk--two ingredients that some of us might not regularly have on hand. This sauce will help you get your fix without running to the grocery store. This recipe yields approximately 1 delicious cup.

Ingredients
 4 tbsp Peanut butter, smooth variety
 ¼ cup Water (+ 1-2 tbsp more for later)
 2 tsp Rice vinegar or apple cider vinegar
 3 tbsp Coconut aminos (may substitute 2 tbsp of gluten-free soy sauce instead)
 1 tsp Agave syrup
 2 tsp Gluten-free Sriracha (add an additional tsp for more spice)
 ½ tsp Salt (or to taste)
 1 tsp Fresh lime juice (optional)

Add peanut butter and water into a cook-safe bowl.

Heat in microwave for 1 minute on a low level or heat in the toaster oven until it appears 'melted.'

Stir well for a few seconds, and you'll notice that the color will turn a bit darker and richer.

Stir in rice vinegar, coconut aminos, agave syrup, sriracha, salt, and optional lime juice. If the mixture is too thick, add an additional 1-2 tbsp of water.

Serve warm or room temperature. Add in chopped peanuts for an optional garnish. Enjoy!
